Holiday Quiche for All Family Members with Any Allergy

Dairy free, Egg-Free, Soy- Free, Nut-Free Quiche! 

There is nothing worse than inviting guests over to your house and not being able to accommodate everyone's dietary preferences, needs, and allergies.

This quiche is perfect for all members, quick and easy, and can be prepared a day in advance.

Vegetable Vegan Quiche

1/2 C garbanzo flour (bob's red mill)
2 T tapioca flour (bob's red mill)
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp turmeric
1/2 tsp garlic powder
1/4 tsp curry powder
2 T nutritional yeast
1/4 tsp white pepper
dash of cayenne
1/8 tsp tarragon
1 C vegetable stock
1/4 tsp dijon

Veggie Mix:

1/2 sweat yellow onion

1/2 cup fennel (use leaves for seasoning on top)

1/2 bunch brocclini 

1 zucchini (cut into thin quarter slices)

For the crust I used a prepared tart crust found in the frozen gluten free section (try whole foods)

 

Directions
1. Pre-heat oven to 350 degrees. Prepare your tart crust, or grease a 9″ round pie pan. 


2. Whisk together all the dry ingredients in a medium sized bowl. Add veggie stock and dijon and whisk until smooth.

3. Pour half of the batter into the prepared pan, then layer with your veggies. Top with remaining batter and sprinkle fennel on top to garnish.

4. Bake for 45 minutes, or until lightly browned on top and firm to the touch. Allow to cool 5 to 10 minutes before slicing. For best results bake 1 day prior to the arrival of your guests to allow the veggies to soften and absorb the flavor of the quiche. Reheat just before eating.
